Moving across the country and living out of a suitcase has kept me a little restricted as far as cooking, but thankfully I’ve got my future MIL’s kitchen to use for now.
This past weekend Dear Fiancé had to travel over the weekend, so when he got home I surprised him with some yummy maple banana walnut bran bread!
This delicious baked good is super easy to whip up, and you probably already have most of the ingredients.
We’ll start by soaking some bran flakes in milk for half an hour. Next we’ll beat in an egg and some vegetable oil.
After that we’ll mash an over-ripe banana and beat it in with some flour, cinnamon, baking powder, maple extract, walnuts, and salt.
We’ll scoop the batter into a sprayed loaf pan and bake for about 25 minutes.

Ingredients:
- 2 cups bran flakes
- 1 1/2 cups milk
- 1 egg
- 1/4 cup vegetable oil
- 1 overripe banana, mashed
- 1 1/4 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon maple extract
- 2 tablespoons chopped walnuts
Method:
Soak bran flakes in milk for 30 minutes.
Preheat oven to 400 degrees. Spray a loaf pan with nonstick spray.
Use a hand beater to mix in the egg and oil. Add mashed banana, flour, baking powder, maple extract, salt, and cinnamon. Beat until combined.
Fold in chopped walnuts.
Pour batter into pan and bake for 25 minutes or until a toothpick comes out clean.
