Toast of Tuesday: Fondue Fun!

Are you prepared for a cheesy post? It’s a gouda thing I can’t think of too many of these jokes, because otherwise I’d never get around to sharing this awesome fondue recipe that you can easily make at home without spending too much cheddar.

Grab a fondue fork and take a dip! Dear Betrothed and I love The Melting Pot. That place holds a lot of special memories for us. However, we have found that dining there on Valentine’s Day (if you can even get reservations) is rushed, cramped, and expensive.

So this Valentine’s Day, we decided to recreate the Melting Pot experience at home!

Dear Better Half loves making bread from scratch, but he ran out of bread flour, so I decided to roast up some rosemary garlic salted red potatoes instead. I seasoned them with the garlic and wine salt from the Melting Pot itself, but you can use any kind of garlic salt.

We used this 3-quart fondue pot. For the price tag, it’s a sturdy workhorse, but the forks it comes with are flimsy.

Other than the potatoes, the ingredient list was pretty simple. We chose a block of sharp cheddar and a block of Gouda for our cheeses. The sharp tastes pair well with the craft beer we chose to cook with (the beer is not for drinking — we both hate beer, blech!).

While Dear Fiance shredded the cheeses and tossed them lightly with cornstarch, I chopped the green onions and raw garlic.

The beer came to a steamy boil VERY quickly, which surprised me for some reason. Then it was time to stir in our cheeses until it was a gooey concoction of deliciousness. Then we added some chopped garlic and green onions, because duh.

The sharp cheese fondue paired nicely with my favorite Chianti label, Da Vinci, which is quite mellow and smooth.

All in all, I’d say it was a great inexpensive and relaxed substitute for the Melting Pot cheese!

Ingredients: 

  • 1 clove raw garlic, chopped
  • 1/2 cup green onions, chopped
  • 5 oz. Gouda, shredded
  • 5 oz. sharp cheddar, shredded
  • 6 oz. craft beer
  • 3/4 tbsp. cornstarch

Method:

  1. Toss the shredded cheese with the cornstarch until it is lightly coated.
  2. Turn on fondue pot to low-to-medium heat and add beer.
  3. Once beer begins steaming, slowly stir in the cheese until consistency is uniform.
  4. Reduce heat to lowest setting and stir in green onions and garlic.
  5. Enjoy with raw cauliflower, raw broccoli, roasted potatoes, raw carrots, baguette bites, apples, or any other veggies.

  1. Mmmm and mmm! Love your jokes! And in the 90s I worked at a meting pot- so I have made many lots of cheese – I moved into upper level manager – but did have fun with cheese! And your photos are great!
